Why Raw Food is good for you

When vegetables are cooked, some of the water-soluble vitamins are lost.

The heating process can change or reduce the effectiveness of some of the nutrients.

 

 

 

 

Even if you’ve never ‘cooked’ a raw Main Dish in your life before, this Raw Cauliflower Korma is an excellent place to start.

It only has 13 ingredients, and lots of those you will have in the pantry!  When cauliflowers are cheap, it makes a really good budget meal.  It is best made a few hours before the meal, to give the flavours time to infuse.  This is useful if you are catering for a crowd.  It is also a good dish to introduce Raw Food to children.

Raw Cauliflower Korma:

Serves: 2,
• ½ cup carrot
• 1/2 cup onion
• 2 tablespoons water
• 2 tablespoons mild curry powder
• 1 teaspoon chili powder
• 1/4 cup cashew nuts
• 1/4 teaspoon turmeric
• 1/4 teaspoon cumin
• 1/4 teaspoon garlic powder
• 1 chopped tomato
• 2 dates
• 1/2 head cauliflower
• 1/4 cup golden raisin

 

Directions:
Prep Time: 10 mins
Total Time: 10 mins
To make the base: Chop cauliflower into small pieces, add raisins and mix. Set aside.
To make sauce: Chop all remaining ingredients into small pieces then put in a blender and mix at a high speed until combined and sauce-like.  Add more water (or some raw nut milk) if required.

 

To serve: Pour sauce over cauliflower and eat! (You could pour over any mix of chopped veggies!) The curry sauce is so good!
